Sweet Rice Recipe with Berries

If you’re wanting a sweet rice recipe, you’ve come to the right place! This baked rice recipe is a really easy oven rice recipe. Eat it for breakfast or dessert! 

This baked brown rice recipe is such a treat! The sweet rice recipe doubles as a breakfast and dessert. Plus, it’s healthy, providing more than a 1/2 cup of fruit in each serving.

How This Sweet Rice Recipe Came to Be

A few months ago, I got tested for food sensitivities. I’d been having horrible migraines and was feeling congested and pretty low-energy. As part of the diet therapy following the food sensitivity testing, I followed a pretty limited diet (only about 20 foods!) 

So I became creative with the limited list of foods that I could eat, including cooking with brown rice. On that list: almonds, rice, raspberries, banana lemon, and honey. Ta-dah! I created my baked rice recipe with berries. This sweet rice is seriously tasty.

Before putting the rice in the oven, you’ll want to cook the rice. I like to save time by using the microwave version.

But of course you can use boiling water to prepare uncooked rice. You’ll want to cover tightly until the rice is tender. You can use either medium grain or long grain rice. Cook until the rice is tender, then remove from heat.

You can use white rice in this recipe, but the brown rice provides more filling fiber. And all told, the recipe only takes about 25 minutes to whip up. Super easy for any home cook! It can be a side dish or a main dish.

While I can thankfully eat many more foods now, this dish remains one of my favorite tasty and healthy—and works for breakfast or dessert.

Vegan Baked Rice Pudding with Berries

If you're wanting a sweet vegan baked rice pudding recipe, you've come to the right place! It's great for dessert or breakfast.

  • 1 cup cooked brown rice
  • 2 ripe bananas, sliced
  • ½ pint raspberries
  • 4 tbsp slivered blanched almonds divided
  • 1 tbsp maple syrup divided
  • 1 tbsp lemon zest
  • cooking spray


  • Preheat the oven to 375° Fahrenheit.
  • In a casserole dish, combine rice, banana slices, and 2 Tablespoons almonds. Gently fold in raspberries, then drizzle with ½ Tablespoon maple syrup.
  • Top with remaining almonds and lemon zest, then drizzle with remaining maple syrup. Bake for about 20 minutes.
