Vegan Baked Rice Pudding with Berries
If you’re wanting a sweet vegan baked rice pudding recipe, you’ve come to the right place! This dish is super easy to make, and it’s great for dessert or breakfast.

This baked rice pudding is such a treat! The sweet rice recipe doubles as a breakfast and dessert. Plus, it’s healthy, providing more than a half a cup of fruit in each serving.
And all told, the recipe only takes about 25 minutes to whip up. Super easy for any home cook! It can be a side dish, a main dish, or a dessert.

Ingredients
You’ll need just a handful of ingredients to make this baked rice pudding:
Brown rice: Before putting the rice in the oven, you’ll want to cook the rice. I like to save time by using the microwave version.
But of course you can cook your rice on the stove top or in a rice cooker. You can use white rice in this recipe, but the brown rice provides more filling fiber.
Bananas and raspberries: Using fruit as a natural sweetener makes this recipe healthier and also boosts its fiber content. This means you can have a serving of this vegan baked rice pudding for breakfast!
Almonds: Adding nuts to the rice pudding means that you get additional protein and fiber.

Step-by-step instructions
To make vegan baked rice pudding, first preheat the oven to 375° Fahrenheit.
Then combine rice, banana slices, and 2 Tablespoons almonds.

Gently fold in raspberries, then drizzle with ½ Tablespoon maple syrup.

Top with remaining almonds and lemon zest, then drizzle with remaining maple syrup.

Transfer to a casserole dish that’s been sprayed with cooking spray.

Bake for about 20 minutes.

You can really use any type of rice to make rice pudding. I like to recommend using brown rice, because it provides additional fiber versus white rice.
Rice becomes hard either when it’s undercooked or when it’s not combined with enough liquid, or both. You can try adding additional liquid to soften the rice, such as almond milk, oat milk, or fruit juice.
You definitely don’t, and this vegan baked rice pudding does not use any egg. Instead, it uses overripe bananas and maple syrup as the binders.

- 2 ripe bananas, sliced
- ½ pint raspberries
- 4 tbsp slivered blanched almonds divided
- 1 tbsp maple syrup divided
- 1 tbsp lemon zest
