Gluten-Free Chocolate Avocado Brownies

Why you must try these brownies
When I originally created this chocolate avocado brownies recipe, my husband, Lawrence, had recently started a gluten-free diet. He’s no longer following this diet, but I am, and so I welcome any scrumptious gluten-free desserts.
Before creating this brownie recipe, I’d never really delved into gluten-free baking before. Let’s just say my first few experiments with baking and making brownies were ultimate flops. Lawrence was nice enough to pretend to like them, though!
Now, years later, I consider this recipe to yield the best homemade brownies. I’ve served them to friends and family, and they loved this avocado brownie recipe!

Brownies that are nutritious? Yup, it’s possible, and these chocolate and prune brownies are just that. Here are the ingredients I used to make chocolate avocado brownies.
Prunes: Making brownies with prunes reduces the need for added sugar while adding bone-helping minerals. And prunes are gluten free.
Avocado: I’ve really gotten into cooking with avocados recently.The avocados replace any need for butter or coconut oil while providing heart-healthy fats.
Walnuts: The walnuts add a lovely crunch and add filling fiber to these gluten free chocolate brownies.
Unsweetened cocoa powder: This is one of my favorite ingredients, as it contains no added sugar and lots of health-helping polyphenols. Plus, the cocoa and prunes in the healthy avocado brownies make it so that you can’t taste the avocado.
You’ll also see that these easy avocado brownies have minimal added sugar, with no maple syrup, granulated sugar, brown sugar, or dark chocolate chips.
Eggs: The eggs bind everything together and add protein, as well!
Gluten-free flour: This recipe utilizes an all-purpose gluten-free flour, which makes the brownies gluten free.

These chocolate avocado brownies are easy to make, taking no more than 25 minutes to prep. Go ahead and grab your high-speed blender or food processor and a baking dish and get started!
Start b preheating the oven to 350° Fahrenheit. Puree prunes and water in food processor until well combined. Add in avocado, sugar, flour, cocoa powder, baking soda, vanilla extract, and eggs; puree until smooth.
Next, fold in ¾ cup walnuts, and pour batter into a 8-by-8 nonstick baking tray. Top with remaining walnuts, and bake for 22-25 minutes, until set. Cool and refrigerate before serving.

They are not, but they are dairy free. To make this recipe vegan, you can substitute the eggs for flax eggs. To make a flax egg, combine 1 Tablespoon flaxseed meal with 2 ½ Tablespoons water. Stir, then let sit for 5 minutes.

Store the brownies in an air-tight container in the fridge for 3-5 days. You can also freeze them for up to a month.

Gluten-Free Avocado Chocolate Brownies
- 1 cup diced pitted prunes
- ¼ cup water, hot
- 2 avocados, ripe
- ½ cup coconut palm sugar
- ½ cup gluten-free baking flour (I used Bob's Red Mill 1-to-1 Gluten Free Baking Flour)
- ½ cup unsweetened cocoa powder
- ½ tsp baking soda
- ¾ tsp vanilla extract
- 3 eggs
- 1¼ cups walnuts, chopped and divided
- Preheat oven to 350° Fahrenheit.
- Puree prunes and water in food processor until well combined.
- Add in avocado, sugar, flour, cocoa powder, baking soda, vanilla extract, and eggs; puree until smooth.
- Fold in ¾ cup walnuts, and pour batter into a 8-by-8 nonstick baking tray.
- Top with remaining walnuts, and bake for 22-25 minutes, until set.
- Cool and refrigerate before serving.
