What screams summer more than banana-based ice cream? This cantaloupe ice cream recipe is ready in minutes and will be your favorite banana-based ice cream. Hello, cantaloupe dessert recipes that require no ice cream machine.
Raise your hand if you love summer! One of my favorite things about warm weather is cooling off with a refreshing treat, like this super simple fruit-based “ice cream” made with cantaloupe, banana, and pistachios.
And hooray for recipes using cantaloupe, one of the tastiest summer fruits in my humble opinion.
I love dessert, so I’m always looking for healthy ways to add it to my day. One of my favorite ways is a quickie fruit-based ice cream, so I thought about what other flavor combos would work well.
It turns out that cantaloupe, banana, and lemon make a delicious frozen dessert treat, aka cantaloupe ice cream! Enter this delicious healthy dessert, one of my favorite cantaloupe recipes.
You’ll need just a few ingredients to make cantaloupe ice cream:
Bananas: When overripe bananas are frozen and blended, they become so creamy!
Cantaloupe: What would cantaloupe ice cream be without cantaloupe?
Almond milk: Note that the banana melon recipe calls for just a little almond milk, which makes this dessert lighter than many ice creams made with both milk and cream. The ice cream is also vegan because it doesn’t contain any dairy milk.
Lemon juice and lemon zest: These ingredients add a nice tang to the ice cream.
Pistachios: Once I had my base for this cantaloupe dessert, I thought about what food would make the best topping. I chose pistachios because they’re full of filling healthy fats, protein, and fiber—so I chopped them up for a crunchy topping.
