Love candied pistachios? Well good news, since this festive pistachio dessert is good for you! The candied pistachio recipe boasts antioxidant-rich pistachios and candied ginger.

If you’ve ever had candied pecans or almonds and loved them, this candied pistachio recipe will quickly become a favorite. Plus, the candied coating is super low in added sugar. 

Let me start this post by saying I love dessert. I love making it, and I love eating it. So I’m always up to the challenge of creating a healthy dessert to bring to a fall gathering or holiday party.

Ingredients

To make these candied pistachios, you’ll need a few ingredients:

Egg white: This adds protein and helps the ingredients stick together.

Pomegranate juice, cocoa powder and candied ginger: These candied nuts are naturally sweetened with pomegranate juice and unsweetened cocoa powder––and contains the smallest amount of added sugar from the candied ginger.

Pistachios: I decided to start this candied pistachios recipe with a base of lightly salted pistachios. They’re one of my go-to snacks when I’m feeling hangry––since their fiber, healthy fat, and protein helps keep me full.

So I figured my candied pistachios dessert could serve as a sweet treat and a mini satiating snack all in on!  I also didn’t want to add a lot of sugary ingredients so thought about what I could use that provides natural sweetness.

Step-by-step instructions

To make candied pistachios, preheat the oven to 250° Fahrenheit.

In a medium bowl, combine juice, egg white, and cocoa powder.

Spray a medium baking sheet with cooking spray oil, then place nut mixture on the sheet in a single layer. Cover with remaining liquid.

Cook the candied pistachios for 1 hour, tossing every 15 minutes.

Once cooled, combine the candied pistachios ginger and place in mini muffin containers.

And then, patience–not my virtue!–was up next. I waited an hour to see what these babies tasted like.

Let me tell you, it was worth the wait. The candied pistachios are delicious! They’re super tasty right out of the oven or at room temperature when they’re had time to cool completely.

To prepare pistachios for baking, you will first want to preheat the oven to your desired temperature. Then, remove the pistachios from the shells.

Combine pistachios lightly with oil until fully coated, and then add desired spices and any other mix-ins. Place the pistachios evenly in one layer on a baking sheet. They are ready for roasting after this step! 

What is the best way to roast pistachios?

Roasting pistachios to perfection isn’t complicated. The best way to roast them is to toss them with a little olive oil and seasonings of your choice. Spread the pistachios out evenly on a baking sheet–they should be in a single layer.

While they’re roasting, you’ll want to toss them every 15 minutes, which will allow each pistachio to roast evenly. The temperature to roast them at depends on your oven. In this recipe, the pistachios are roasted at 250° Fahrenheit for 1 hour.

To enhance the flavor of roasted pistachios, you can combine them with your favorite spices and seasonings. In this candied pistachios recipe, I added cocoa powder.

What spice goes well with pistachio?

Pistachios can be mixed with a variety of different spices and seasonings. The possibilities really are endless for what you can mix them with.

Some options include cinnamon, coriander, ginger, garlic, curry powder, smoked paprika, cumin, or a simple mix of salt and pepper.

Adding spices to roasted pistachios really helps to bring their delicious flavors to life! You can also combine pistachios with other ingredients like fruit juice, cocoa powder, and candied ginger, like how I did in this candied pistachios recipe.
