This sweet pita bread recipe is fueling. And the best news? You can make it in minutes! 

How This Cherry Pita Came to be

I don’t know about you, but I love cozy comfort food. And this pita recipe is just that. You can have it as a snack or a dessert! 

This cherry pita snack is inspired by a vacation I took to Prague several years ago with my best friend Diana. We visited a tea house called Dobra Cajovna. In addition to tea, this establishment serves different sweet and savory pita breads. 

These days, because traveling abroad is nearly impossible thanks to the coronavirus pandemic, I’ve been enjoying daydreaming about my past trips.

I honestly don’t remember what Diana and I ordered all those years ago. But I know it had featured some combination of fruit and sweet cheese, so I set out to create something similar. 

When you make this mascarpone pita, you can slice the pita into wedges and arrange the pita wedges on a plate. Or you can eat it whole! This single layer pita tastes like a cherry pie! If you’d like to make the recipe gluten free, just swap out the pita for a gluten-free one.

Ingredients
  

  • 1 4-inch whole-wheat pita bread
  • tbsp mascarpone
  • ¼ cup frozen dark cherries, unsweetened

Instructions
 

  • Toast the pita bread.
  • Meanwhile, microwave cherries in a small bowl until warm, about 1 minute.
  • Top pita with mascarpone and cherries. Alternatively, you can slice the pita and stuff the middle with the mascarpone and cherries.
