Italian Flatbread Breakfast Sandwich
Here’s a flatbread breakfast sandwich you’ll love. The flatbread Panini cooks up in minutes and is the tastiest breakfast Panini!

Who says you can’t have a sandwich for breakfast? This Italian breakfast Panini marries fabulous flavor with quick cooking for a meal that’s ready in no time. If you love Panini flatbread recipes, this will become one of your go-to flatbread sandwich recipes.
Ingredients
The flatbread Panini features protein-rich eggs and mozzarella, fiber from flatbread and tomatoes, and a burst of fresh flavor from the basil leaves. You only need five ingredients to make a flatbread breakfast sandwich:
Flatbread: You can use any type of flatbread that you’d like––choose gluten free if necessary. Flatout flatbread tends to be lower in calories.
Eggs: Scrambled eggs and mozzarella add filling protein to the flatbread Panini.
Tomato and basil: Adding fresh produce adds oomph to the flavor and provides satiating fiber.

I’m not one of those people who ever skips breakfast. After all, the effects of skipping breakfast aren’t so pretty.
On a personal note, I would get hangry really, really fast if I didn’t eat till lunchtime! And as a registered dietitian, I know the importance of starting the day with a nutrient-packed meal.
This Panini flatbread breakfast sandwich is one of my favorites because it feels fancy, yet is super simple to make.
To make the breakfast panini, first preheat a Panini sandwich press. Fold flatbread, and place on sandwich press.
Fill with scrambled eggs, mozzarella, tomato slices, and basil. Grill sandwich on Panini press until cheese is melted and the sandwich is hot. Cut in half, and serve immediately.

Recipe FAQ
If you don’t own a Panini press, no problem! You can use a cast-iron grill pan to make a flatbread breakfast sandwich.
You’ll want to press the lid of a pot on top of each side of the sandwich to form grill marks. Use cooking spray, if you’d like, over medium-high heat.
You absolutely can. You can toast the flatbread on a baking tray in the oven or in a toaster oven.
Feel like turning the cooked egg mixture into an omelet instead of scrambled eggs? That’s absolutely fine.
