Italian Flatbread Breakfast Panini

Who says you can’t have a sandwich for breakfast? This Italian breakfast Panini marries fabulous flavor with quick cooking for a meal that’s ready in no time. If you love Panini flatbread recipes, this will become one of your go-to flatbread sandwich recipes.

How to Make a Flatbread Breakfast Sandwich
I’m not one of those people who ever skips breakfast. After all, the effects of skipping breakfast aren’t so pretty. On a personal note, I would get hangry really, really fast if I didn’t eat till lunchtime! And as a registered dietitian, I know the importance of starting the day with a nutrient-packed meal.
This Panini flatbread breakfast sandwich is one of my favorites because it feels fancy, yet is super simple to make. And you can really eat it any time of day.
The flatbread Panini features protein-rich eggs and mozzarella, fiber from flatbread and tomatoes, and a burst of fresh flavor from the basil leaves. You don’t even need two slices of bread to make the recipe!
If you don’t own a Panini press, no problem! You can use a cast-iron grill pan, pressing the lid of a pot on top of each side of the sandwich to form grill marks. Use cooking spray, if you’d like, over medium-high heat.
As with all my recipes, you can make minor alterations if you’d like. Feel like adding salt and pepper? Go for it. I personally love a sprinkle of black pepper on almost any savory dish.
Want to toast the bread on a baking sheet, instead of grilling it? That’s fine. Just make sure to pre-heat the oven! Want to slightly pre-cook the thinly sliced tomatoes in a skillet over medium heat? No problem.
Feel like turning the cooked egg mixture into an omelet instead of scrambled eggs? That’s absolutely fine. I’ll just tell you not to butter the flatbread. You won’t see any “bread butter side down” instructions in this recipe!

Italian Flatbread Breakfast Sandwich
Ingredients
- 1 flatbread
- 2 eggs, scrambled
- 1 ounce part-skim mozzarella, sliced
- 1 plum tomato, sliced
- 3 leaves fresh basil, torn
Instructions
- Preheat Panini sandwich press.
- Fold flatbread, and place on sandwich press.
- Fill with eggs, mozzarella, tomato slices, and basil.
- Grill sandwich on Panini press until cheese is melted and the sandwich is hot. Cut in half, and serve immediately.
