There’s nothing better than French toast for breakfast––and there are so many different ways that you can make it. This fruit French toast with grapes is one of my favorites. It’s a unique way to use fresh grapes, and it’s super simple to put together.

Plus, it boasts 20 grams of protein and 6 grams of fiber per serving.

For the french toast: You’ll need 2 slices of whole-wheat bread, 1 large egg, 1 large egg white, ¼ tsp vanilla extract, and ⅛ tsp cinnamon. 

Grapes: This is the fruit that I used for this recipe! You only need ½ cup, and you’ll slice the grapes in half before adding them to the French toast as a topping.

Pistachios: These are a tasty and crunchy topping for fruit French toast. These also provide a trio of fiber, healthy fats, and plant-based protein.

Step-by-step instructions

Here’s how to make fruit French toast:

Make the egg mixture: In a small bowl, whisk together the egg, egg white, vanilla extract, and ⅛ teaspoon cinnamon.

Dip bread in egg mixture: Take the whole-wheat bread slices and dip them into the egg mixture, turning them to evenly coat the sides. Tip: Don’t leave the bread in the egg mixture for too long, or it may get soggy.

Cook the French toast: Spray a large non-stick pan with oil. Cook the bread slides over medium heat until browned on both sides.

Saute the grapes: While the French toast is cooking, heat olive oil in a small nonstick pan. Saute the grapes over medium-high heat, about 3-4 minutes, until they begin to soften.

Add toppings: When the French toast is cooked and the grapes are sauteed, put the toast on a plate and top with grapes, pistachios, nutmeg, and remaining cinnamon. Enjoy!
