Ingredients

The ingredient list for vegan sausage patties is fairly simple, with pantry staples you may already have on hand. Check out this list of what you’ll need:

Red lentils: Lentils are a great meat alternative because they are high in plant-based protein! Red lentils because they have a similar appearance to regular sausage—so they’re perfect for the base of vegan sausage patties.

However, you can use any type of lentils for to make these sausage patties.

Onion: You’ll need half a cup of diced onion for this recipe, which adds extra savory flavor.

Seasonings: The spices and seasonings really add to the flavor of vegan sausage patties! I used garlic powder, fennel seeds, Italian seasoning, and a little salt and black pepper.

Breadcrumbs: These are a key ingredient in this recipe—they help bind all of the ingredients together. You could also use oats as a binder, but please that this recipe was only tested with breadcrumbs.

Step-by-step instructions

First, mix the red lentils, diced onion, garlic powder, fennel seeds, and Italian seasoning in a blender.

Cover tightly, and pulse ingredients until you reach a thick mixture.

Next, transfer the lentil mixture to a medium bowl. Add the breadcrumbs, salt, and pepper,

and mix together with a spoon.

Form the mixture into patties using your hands. Set the patties aside on plate.

Now it’s time to cook the patties. Heat a non-stick skillet to medium high and add olive oil. Once the olive oil is warm, place the patties on the skillet and cook until they are golden brown on both sides.

Serve the patties hot with your desired gravy. You could put the sausage on breakfast sandwiches, biscuits, or simply serve them with a side of eggs, fruit, or roasted vegetables.

Vegan sausage patties are great for meal prep. Store them in the fridge in an airtight container and enjoy within three to four days. You can also store them in the freezer for up to two months.
