Why I love smoothies
Although I love breakfasts like pancakes and French toast, I tend to reserve those types of meals for weekend mornings.
So when I’m looking to get out the door—or just to my desk!—early in the morning, I like a quick, easy, and nutritious breakfast. That’s why I love smoothies so much.
And this time of year, with the holidays in full force, I feel like my schedule is so packed. I don’t anticipate that feeling easing up in the new year, which is why I love having go-to easy breakfast recipes on hand.
I mean, how can you say no to this cashew milk smoothie?
No doubt you’ve enjoyed cauliflower in many ways before, including rice cauliflower. But have you ever put cauliflower in a smoothie? Well get ready, because this wild blueberry cauliflower smoothie is as delicious as it is fueling.
To make this wild blueberry cauliflower smoothie, you’ll need just a few ingredients:
Cashew milk and cashew yogurt: In a regular smoothie recipe, I’d typically use dairy milk. And I often use almond milk in vegan smoothie recipes, but I used cashew milk in this cauliflower blueberry smoothie for a change of pace.
I don’t love including coconut milk in smoothie recipes because it doesn’t offer much in the protein department.
Frozen wild blueberries: If you didn’t already know, wild blueberries are so good for you. Not only do they offer double the antioxidants of regular blueberries, they also assist with everything from brain health to immunity.
The deep purple-blue color comes from anthocyanins, a type of antioxidant that are very beneficial for your health. The berries and cauliflower in this cauliflower blueberry smoothie also provide fiber, which helps keep you fuller for longer.
Frozen strawberries: I like to add strawberries for additional antioxidants. Because you’re using frozen fruit, you won’t need any ice.
Cauliflower florets: You can use white or purple cauliflower in this cauliflower berry smoothie recipe, but I decided to go with purple to add even more antioxidants and to make the purple color of the smoothie even more vibrant.
Powdered peanut butter: I used several vegan ingredients—powdered peanut butter, cashew milk, and cashew yogurt—to amp up the protein in this smoothie. I love using tasty forms of plant-based protein. These protein ingredients helps keep you satiated for longer!
Vanilla extract and maple syrup: These add a bit of natural sweetness. I like that the vanilla extract contains no added sugar and that the maple syrup has many health-helping polyphenols.
Because I like to get as many nutrients, including health-helping vitamins and minerals, from my smoothies, I added lots of fruits and veggies to my recipe. These include wild blueberries, strawberries, and cauliflower.
If you’d like the cauliflower smoothie to be colder, you can freeze the cauliflower and add the frozen cauliflower to your cashew milk smoothie. Or you can add ice!
Making this cauliflower smoothie is so easy. All you have to do is add all the ingredients––the frozen wild blueberries, frozen strawberries, cauliflower, cashew yogurt, cashew milk, powdered peanut butter, maple syrup, and vanilla extract––to a blender.
Then blend, and enjoy!
It surprisingly is! Cauliflower has a very neutral taste, which works very well in smoothies like this wild blueberry cauliflower smoothie. It also adds many nutrients, including fiber.
For many people, adding vegetables such as cauliflower to smoothies is a great way to “hide” servings of vegetables. Cauliflower makes a great addition to smoothies for this reason, as does spinach and kale.
Cauliflower in a smoothie tastes surprisingly like…nothing. In this blueberry cauliflower smoothie, the cauliflower has a very neutral taste that is overpowered by the sweetness of the wild blueberries and strawberries.

Vegan Wild Blueberry Cauliflower Smoothie
- ¾ cup unsweetened cashew milk
- ½ cup plain cashew yogurt
- ¾ cup frozen wild blueberries
- ¼ cup frozen strawberries
- ½ cup cauliflower florets (I used purple cauliflower), coarsely chopped
- 5 tbsp powdered peanut butter
- 1 tsp vanilla extract
- 2 tsp maple syrup
- Blend ingredients together, and enjoy!
