Vegan Sausage Gravy

Here’s a vegan sausage gravy that’s quick, easy to prepare, and totally plant based. Pair it with vegan sausage patties or almost any dish!

Ingredients
  

  • cup unsweetened oat milk, or almond milk gluten free, if necessary
  • 2 tbsp corn starch
  • 1 tbsp extra-virgin olive oil
  • ¼ cup onion, diced
  • 4 vegan sausages cut into rectangles; gluten free, if necessary
  • 1 cup low-sodium vegetable broth
  • 2 tbsp vegan butter
  • Salt, to taste
  • Black pepper, to taste
  • Scallions, diced, for garnish
  • Parsley, for garnish

Instructions
 

  • Mix ¼ cup of oat milk with the corn starch, until it dissolves.
  • Heat a non-stick skillet to medium and add the olive oil. Add onion and cook until translucent, about 7minutes.
  • Add the vegan sausages and break them with a wooden spoon. Cook them until they are crumbled and crispy, around 10 minutes.
  • Add in vegetable broth, the rest of the oat milk. Add salt and pepper and cook for a few minutes, until mixture is bubbly.
  • Add the oat-milk-and-cornstarch mixture, and cook for a couple more minutes or until the sauce thickens.
